Granola - Deliciously crunchy and not super sugary like the store bought stuff!

For months I've been craving granola so finally, after walking by the bulk bins at Henry's each week and scowling at the sugar content of their pre-made stuff I bought the yummies I wanted in my own. It was super easy and turned out fantastically crunchy with just the right amount of sweetness. 

3 cups old-fashioned rolled oats
1 cup sweetened flaked coconut
1/4 cup grape seed oil
1/2 cup nuts (I used cashews and raw pepitas)
1/4 cup mild honey
Pinch cinnamon
Pinch of cardamom
Pinch salt (flaky sea salt is wonderful in here)
however much you want of dried fruit (I used orange cranberries, dates, and apricots)

Preheat oven to 375°F. Stir together all ingredients except the fruit in a large bowl until clumpy. Spread mixture evenly on a cookie sheet and bake, stirring occasionally, until golden brown, 30 to 35 minutes, but checking every five minutes after the 15-minute mark because it burns quickly. Let cool for about 45minutes in the open air to evaporate any extra moisture. Stir in dried fruit.
*Granola keeps, frozen (the fruit’s moisture softens granola if not kept frozen) in an airtight container, a few months.

My next batch will experiment with vanilla extract and pumpkin butter. yum
