As usual our family dinners turn out healthy and quite yummy to boot. Today's had a few experiments and both scored high on my "yum-scale". First were marinated grilled sirloin kebabs served over a green salad.
I marinated chunks of fat trimmed sirloin steak in this super simple sauce for almost 2 hrs:
2 tbs. olive oil
thyme, black pepper, and cayanne to your liking.
Second was the amazing peach pie my mom and i cocreated. The recipe stems back from somewhere in my family and calls for apricots. But because apricots are so damn expensive i chose to dick around and try it out with peaches instead. The tapioca makes the inside gooey but not overly sweet or sticky. perfecto!
Apricot (or peach) PIE!
1tbsp lemon juice
4 c fresh sliced apricots
1/2 c sugar
1/2 c firmly paced brown sugar or 1/2 c honey
2 tbsp tapioca(3 if honey is used)
Instructions
Mix all ingredients and then pour into uncooked pie shell. Dot with 2 tbsp margarine or butter on top. Cover with either a lattice topping or full crust topping placing slits. Bake at 425’ for 45-50 minutes.
