Our favorite & simple Grilled Cheesies

For a simple and deliciously satisfying meal Matt & I often turn to our favorite comfort food--Grilled Cheese! But instead of the using the American cheese of our youth, we sophisticate these sandwiches by amping up the quality of the ingredients. These are no fail and delicious so I thought I'd share them...

Ingredients and preparation:
Fresh bread loaf (I like using an Rosemary Olive loaf) you slice to the thickness you desire.
Spray each side with Pam cooking spray layer a slice or two of Muenster Cheese and a slice of Pastami and sandwich with another slice of bread (sprayed with Pam). Place sandwich on a medium heat pan, grill, or griddle. Flip when bread is toasted and cheese is melting. Eat hot paired with a spinach salad or the classic tomato soup.
*I find all these ingredients at Trader Joe's. Also, the cheese should be room temperature before putting in the sandwiches - I find it melts completely this way. Enjoy!
