Slew of health muffin recipes...starting with BANANA!

I get my daily does of Women's (and Men's) health magazine sent to me via Twitter. I'm pretty much obsessed with the Eat this NOT That nutrition information. These websites combined give a lot of good health, nutrition, and exercise information you can tailor to your personal preference. And that's key, maintaing and/or loosing weight needs to be sustainable by you! 


I personally love to bake and I love to eat baked goods. So I'm forever trying to find delicious tasting and healthy baked recipes--sounds like an oxymoron right? With the food industry coming out with sweet alternatives (i.e. Stevia, agave, and the age old honey) we have a lot more options than white flour and sugar. So continue after the jump for a successfully scrumptious HEALTHY banana muffin recipe (I stick to muffins because they're individually sized so eating one is enough Amanda).
         1/2 C rice flour
         1/4 C ground flaxseed
         1 tsp baking powder
         1 tsp baking soda
         2 eggs, beaten
         1/4 C plain yogurt
         1/2 C agave syrup
         1/3 C grapeseed oil
         1/4 C walnut pieces

Directions
1.
Preheat oven to 375 degrees F.

In a large bowl, whisk together oatmeal, flour, flaxseed, baking powder, and baking soda.
3.
In a separate bowl, combine eggs, yogurt, bananas, syrup, and oil. Add flour mixture and fold in walnuts.
4.
Divide batter into paper-lined muffin cups. Bake for 20 to 22 minutes or until tops spring back when lightly touched. Cool on a wire rack.
5.
Makes 18.
