I personally love to bake and I love to eat baked goods. So I'm forever trying to find delicious tasting and healthy baked recipes--sounds like an oxymoron right? With the food industry coming out with sweet alternatives (i.e. Stevia, agave, and the age old honey) we have a lot more options than white flour and sugar. So continue after the jump for a successfully scrumptious HEALTHY banana muffin recipe (I stick to muffins because they're individually sized so eating one is enough Amanda).Directions
1.
Preheat oven to 375 degrees F.
2.
In a large bowl, whisk together oatmeal, flour, flaxseed, baking powder, and baking soda.
3.
In a separate bowl, combine eggs, yogurt, bananas, syrup, and oil. Add flour mixture and fold in walnuts.
4.
Divide batter into paper-lined muffin cups. Bake for 20 to 22 minutes or until tops spring back when lightly touched. Cool on a wire rack.
5.
Makes 18.
