
(easy) CHEESY BROCCOLI SOUP
4 c water
12 oz frozen hash browns or diced fresh potatoes
1 c chopped celery
1 c chopped onion
1 c chopped carrots
4 c chopped broccoli
2 pkg chicken broth or 2 c chicken broth to replace 2c water –
1 tsp salt
1/2 tsp pepper
3 tbsp flour
2 c skin milk
6 oz velvetta, cubed
Instructions
In large pot combine water, potatoes, celery, onion, carrots, broccoli, chicken broth, salt, pepper. Bring to boil and simmer until veggies are tender 20-25 minutes. Blend flour with milk. Slowly add to veggie mix stirring constantly. Stir and heat until thickens. Add cheese cubes and stir until melted and smooth :)
