If you know me at all you know I LOOOOVE sweet potatoes and squashes. Quite odd because I despised them as a kid. Now I realize their true deliciousness and nutrient density so I very much appreciate their presence in my life and diet. Anyhow, I have grilled the taters on before and they take on a rich smokey flavor added to the sweetness - it's delightful. I have NOT added coconut to them. This will be a new idea for me once I get my indoor grill (yes yes a Le Creuset one is on it's way =) Schmeared with healthy coconut oil then sprinkled with coconut flakes before serving...sounds like dessert! Yum!
