Thai Mango salad

For my lunch yesterday I made up a salad and it turned out so well I have to share. This original recipe is sweet and very satisfying!

On a bed of butter lettuce, romaine, green or red leaf (your choice) top with:
thinly sliced raw carrots
inch cubes of fresh ripe mango
grilled shiitake mushroom
chopped green onion
roasted (non salted) cashews
dried cranberries
either grilled chicken breast or cooked shrimp
garnish with fresh chopped cilantro
drizzle with lime juice
grind fresh pepper on top

Lemongrass dressing: (for one large salad - increase ratios if feeding more)
In a coffee grinder grind: 1 tsp. chai seeds, pinch of dried lemon grass
In a separate small bowl combine: 1 tbsp. rice vinegar, 1 tbsp. honey, 2 tsp. soy sauce, 1 tsp. ground turmeric and 1 tsp. coconut milk.
Combine ground chai and lemon grass with liquid --mix well and toss with salad.
