What's for dinner tonight? Mizithra what?

I promised my boyfriend and myself I would be a good eater today. By that I mean eat real meals throughout the day instead of nibbling like a little bird. I've been doing well so far but am stuffed to the brim. To show him my progress I will be making dinner tonight (something I do anyway) and here's what's on the menu...


Pasta with herbed chicken sausage, roasted veggies, drizzled with butter and mizithra cheese! Read on for the recipe...


How to:
Ingredients

  • Coarse salt and ground pepper
  • 3 Italian-style cooked chicken sausage, thinly sliced
  • 1 medium zucchini, cut into 1-inch cubes
  • 1 red bell peppers (ribs and seeds removed), cut into 1-inch squares
  • 1/2 medium red onion, halved and cut into 1-inch squares
  • 2 cups broccoli rabe (what is this broccoli rabe? click here)
  • 6 sprigs fresh thyme (or 1/2 teaspoon dried)
  • 2 tablespoons olive oil
  • 1/4 pound whole-wheat egg noodles
  • 1/4 tablespoon melted butter for drizzling
  • grated mizithra cheese, sprinkle on top (what is this mizithra stuff? click here)
  1. Preheat oven to 450 degrees, with racks in upper and lower thirds. Set a large pot of salted water to boil. On two rimmed baking sheets, toss sausage, vegetables, thyme, and oil; season with salt and pepper. Roast until tender, 25 to 30 minutes, rotating sheets halfway through.
  2. Meanwhile, cook noodles until al dente. Reserve 1/2 cup pasta water; drain pasta, and return to pot. Toss with meat mixture. Loosen with pasta water as needed, and season with salt and pepper. Drizzle butter and cheese over top.
