
I find Banana bread is a no-miss baked good. Most people like it (except my mom who is allergic to bananas now). In honor of her allergy I decided to make her delicious recipe. She made this for us growing up - used to serve it for breakfast toasted with a little bit of margarine on top. If you want to serve it as dessert, spread on a little Nutella and a scoop of vanilla ice cream. Yummy! (after the jump...)
1 3/4 c flour
2/3 c sugar
2 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
2 or 3 medium ripe bananas mashed
1/3 c shortening, margarine or butter
2 tbsp milk
2 eggs
1/4 c chopped nuts
Instructions
Ina a large mixer bowl combine 1 c of the flour , the sugar, baking powder, baking soda and salt. Add mashed bananas, then butter then milk. Beat with an electric mixer on low speed till blended, then on high speed for 2 minutes. Add eggs and remaining flour; beat until blended. Stir in nuts. Pour batter into a greased loaf pan(8x4x2). Bake at 350’ oven for 55-60 minutes or until a tooth pick inserted near the center comes out clean. Cool for 10 minutes on a wire rack. Remove from pan and cool thoroughly. Wrap and store overnight before slicing. Makes one loaf(16 servings).
