My last recipe the other night was what I brought for dessert to my mom's dinner. She made a great organic oven-roasted chicken (quite moist and flavorful!) with roasted root veggies: carrots, sweet potatoes, onions, mushrooms, and acorn squash (simply toss in olive oil, sprinkle with garlic salt and roast for 45min at 400). Delish!
So I followed up her great and hearty-healthy meal with a low-fat Chocolate pudding Pie. The directions are on the box. Buy a large box of Jello brand instant cold-mixed sugar-free fat-free pudding mix, add the appropriate amount of milk (I use 2% for richness), whisk away then pour into a store bought graham cracker crust. Chill in fridge for 1 hr. then top with whipped cream and chocolate shavings. *If desired place a layer of sliced banana, oreos, caramel, strawberries, whatever you crave at the bottom of the cracker crust before pouring pudding then also decorate on top to garnish*
Ingredients:
1 large instant nonfat, sugar-free Jello Pudding Mix (any flavor you want really)
2 % milk
Graham Cracker Crust (you can use regular pie crust as well but you have to bake it)
Whipped cream
Whatever yummies to garnish
