Made a great new recipe tonight...and my guy actually liked it! Score!! It's low carb, filling and full of flavor. Plus it's a pretty quick make. Here's the scoop:
Moroccan Stewed Chicken--serves 4
Ingredients:
1 lb. boneless, skinless chicken
1 large zucchini, cut into cubes
1 can garbanzo beans
1 can diced tomatoes
1/2 tbsp. olive oil
1 cup chicken stock
1/4 tsp cayenne pepper
1 tsp ground cumin
1/2 tsp ground cinnamon
salt & pepper to taste
*serve over rice or couscous
TO MAKE:
Heat oil in large saute pan . Season chicken w/salt 'n peppa, place into pan and cook for 2-3 min on each side (until browned). Add zucchini and stir until lightly browned. Add beans, tomatoes, stock, spices and turn to low heat--let simmer for 10-15 min. Dish over rice or couscous prepared according to package instructions.
With 1/2 cup couscous = 420 cal, 31g protein, 41g carbs, 10g fat, 7g fiber
