What's for lunch? Getting my protein in

Knowing I need to get more protein into my diet doesn't mean it happens easily. As yesterday's article stated, protein on the go is hard to find and usually unhealthy. After spin today I will be picking up some beef jerky (low sodium) which is a great protein snack to nosh on. However I'm taking Matt lunch today and want to include a rounded protein meal for him too. Here's what's cookin'...


Chicken Panini

(makes 2 sandwiches) 
Ingredients: 
  • 1/2 loaf French bread
  • 1 chicken breast, sliced in half to make 2 thin filets
  • olive oil
  • tomato slices
  • basil leaves
  • mozzarella
Directions:  Marinate/season your chicken breasts the way you’d like (simple salt and pepper will do too). Pan fry in a couple of teaspoons of olive oil on medium/medium high heat on both sides until cooked. Assemble tomato, basil, and mozzarella on French bread and grill on a Panini press until toasted, hot and bubbly. Serve.
