Mmm Mmm cake balls!

There were two reasons for making this recipe: 1) to test it out before making it for Matt's nephews' birthday next weekend and 2) for class tonight (I'm in charge of dessert =)

Let's just say, the flavor is fabulous (my boyfriend ate a bunch before I woke up this morning and he's a picky bugger). My presentation however needs some work. Good thing I practiced for class before my debut at the babies' birthday.

I definitely had some mishaps that I had to overcome. I accidently bought regular cream cheese rather than cream cheese frosting. So I had to make my own frosting. Well shit, I didn't have any sugar. I improvised with some molasses, stevia and white chocolate. It turned out well. However I'll be curious to see how the real recipe comes out when I do it again in a week.

But because of that mess-up I learned how easy it is to manipulate the flavors you want. Most recipes are a simple chocolate recipe with vanilla frosting. To spice it up use a chocolate or vanilla cake but change the frosting flavor. Using a premade frosting or whipping up your own add some spices (cinnamon, nutmeg, cloves, peanut butter, peppermint extract, banana, whatever!).

You can also decorate however you want. Oreos on top, mints, sprinkles, squiggles etc.

Here's the basic recipe:

Chocolate Cake Balls



Makes about 50

Ingredients:

1 box chocolate cake mix (I used triple chocolate flavor)
1 can of cream cheese frosting
1 bag of chocolate candy coating (or chocolate chips)
1 bag of vanilla candy coating (or white chocolate chips)
7 Oreos, crushed
Sprinkles

Directions:

Make the cake according to the directions on the box. Cool completely.
Crumble the cake into a large bowl. Add frosting and mix thoroughly. Roll the cake mixture into balls and place on cookie sheet. Chill them for several hours or freeze for about 30-60 minutes.
Melt chocolate in bowl and roll balls in chocolate. Lay balls on wax paper and top with sprinkles or crushed Oreos before chocolate hardens. I find it easier to melt only 1/2 bag of chocolate at a time in order to keep the chocolate hot and easier to work with.
Once the chocolate has hardened, the balls can be stored in an air tight container at room temperature for about 3-4 days.
