I'm admitting it, I'm tracking "points" through weight watchers. It might sound weird coming from a person who blogs about healthy habits but I'm not shy to admit that I have 10-15 lbs that I could loose (like most women feel about their bodies). Because I "feel like" I eat healthy most of the time doesn't mean I do or in the right ways. To be honest, I think I eat too little sometimes and it's hurting my body. So my weight watchers tracking is more of an accountability program for me. It makes me eat the right amount. And if I'm still hungry, it lets me fall back on my favorite...fruit!
So for anyone else out there doing this thang, here's a recipe to help. It's only 1 weight watchers point per muffin and very satisfying! I'll be using the base of this recipe but modifying it to make apple muffins in a few days so stay tuned. Oh, and say thanks to my mom for sharing!

Weight Watcher’s Pumpkin Muffins
1 c pumpkin
2 tsp pumpkin pie spice
1 tsp cinnamon
1 tsp baking soda
8 pkgs sweet’n low or (10 micro spoons stevia)
1 egg
2 tsp vanilla
2/3 c dry milk(powder)
7 tbsp flour
1/2 c grated carrots
Instructions
Mix all of the ingredients together, pour in muffin pan sprayed with Pam. Bake at 350’ for 20 minutes. Makes 12 muffins.
*NOTE: These muffins will be dense and moist--which means they are filling!
