Made up muffins

I was sick yesterday therefore stuck inside on the cloudy, rainy day. This meant it was perfect for doing indoor things (no, not cleaning...I was sick remember? Though I desperately need to clean) but rather BAKING! Oh I do love to bake when I'm bored! What was I going to make that was healthy enough we'd eat it? Muffins...yes, muffins are generally my go-to.

I definitely didn't want to go to the grocery store so I needed to be inventive with what was already in my cupboards. It was going to be heart healthy apple muffins...no fail right? I threw in some apple sauce here, cinnamon there...and, they turned out delicious. But now, my cousin wants the recipe. Ut-oh!! What recipe? I didn't write down a thing! Here's my attempt to re-create my yummy health muffins:

*caution: bake at your own risk*
I was running low on flour so I only made 4 muffins =)
In a large bowl combine:
1c whole wheat flour
1 1/2c rolled oats
1 tbsp. flax or chia seed (optional)
2 individual servings apple sauce (about 1 cup total)
1 tsp. each: cinnamon, nutmeg, all spice, and ginger
1 tbsp. baking soda
pinch salt
1/4 cup each: honey & sugar (brown or white)
1 baking apple (I used an Arkansas Black apple and it was amazing!), finely diced

Mix well. Sprinkle tops with oats and a slice of apple. Pre-heat oven to 350 and bake muffins in greased muffin tins for 20-30 minutes or until inserted knife is dry.
*Because they are vegan, muffins will be moist--I think they're delicious that way*

  1. Yum! That sounds good :) I will probably try and make it into a bigger recipe and make some at some point! I love it :)
