A snack that POPS!

Cranberries are a host of antioxidants. Antioxidants fight free-radicals which are known to cause cancer. Most people simply enjoy cranberries during holiday meals or dried in salad and/or baked goods. These are great ways to enjoy the fruit but how about something a little for fresh and refreshing to the taste buds?


I had never tried eating raw cranberries until Christmas this year when my cousin and her sister brought a bowl of cranberries dipped in white chocolate (or yogurt chips?). I couldn't stop popping them into my mouth! What a fun and fabulous to-go snack, pick-me up, and zesty way to get your anti-O's in! 


Chocolate covered (white, dark, or milk) or yogurt chip covered:
12 oz. bag fresh cranberries 
1 12 oz. bag semi-sweet chocolate chips or whatever you want to dip in.

Wash cranberries, drain, pick out soft ones and stems and dry well on towel or chocolate won't stick. 
Melt chocolate chips in double boiler, or just put a smaller pot on a slightly larger pot with water in the bottom pot.  Bring water to a simmer, then lower very low as you add the chocolate chips to top pot, being careful not to get any water in the chocolate.   
As soon as chocolate is completely melted, take pot with chocolate in it off the burner and add the cranberries and quickly coat them with the chocolate.   

Using a slotted spoon or fork, drop coated cranberries in a pile on cookie sheets and refrigerate (or if cold enough, put outside) until set up.  Keep in fridge until you use them.  Store any uneaten ones in fridge and they will keep well for a couple of weeks. 


*Pop in mouth solo, add to trail mix, salads, add to morning cereal--so many options!

  1. They are awesome, right? :) Glad you liked them! It was white chocolate, but we've done dark chocolate, too, and it's also awesome. Plus you'd get the antioxidants from dark chocolate as well :) yay!
